Every loaf starts with a live starter — fed daily, fermented slowly, baked in batches. Croissants, pain au chocolat, and seasonal tarts follow the same patience: cold butter, cold hands, no shortcuts.

Olive oils, aged vinegars, local honey, small-batch preserves, and artisan cheeses — selected from Texas producers and trusted importers. Everything we stock is something we'd keep in our own kitchen.

Our Story

A neighborhood
bakery that takes
its time.

WXYZ Bar opened on Westheimer Road with a simple conviction: that good bread shouldn't require a reservation, and a well-stocked pantry shouldn't require a trip downtown.

We bake in small batches, starting before sunrise. Our sourdough ferments for 36 hours. Our croissants are folded over six times. We work with local farms for our dairy and eggs, and we turn over our market inventory weekly to feature what's fresh and what's interesting.

This isn't a chain. It's not a franchise. It's a corner bakery in Houston that believes the details matter — and that the best thing you can do for a customer is show up early and do the work properly.

The Process

From the hearth to
your table

Every item that leaves our kitchen follows the same path: sourced carefully, prepared deliberately, and presented simply.

Source

Flour from regional mills. Butter from Texas dairies. Eggs from local farms. We know the people who grow and make what we sell.

Build

Our starter is 4 years old. We build a levain each morning, mix by hand, and let the dough rest. Speed is not a value here.

Bake

Deck ovens at peak heat. Steam injected at the right moment. We pull loaves when the crust sings — not before, not after.

04

Serve

Warm bread, proper coffee, honest prices. We set out what we have and we don't pretend it's more than that.
